Caprese Salad

I’M TAKING A BREAK from writing about garden flowers and have decided to write about a simple summer salad that has come into my focus this last month. It is called a Caprese Salad.


It has piqued my culinary interests for about three weeks, just as fresh local tomatoes are starting to become available. It is easy to make and offers a low-calorie side dish that is simply delicious!


I first read about its origin, where several theories are presented, and I offer here the explanation that makes the most sense to me. It is a beloved Italian dish that has been enjoyed for over a century, originating from the Isle of Capri in the Mediterranean. It is known for its fresh flavors and patriotic symbolism, incorporating the colors of the Italian flag (green, white, and red). The salad is often noted as Insalata Capri on American menus.


My herbs are abundant out my front door, growing in pots, and the sheer act of collecting basil and mint with a few pinches has transported me by fantasy to a small café, where I'm enjoying my Caprese creation, accompanied by crusty fresh bread and a glass of wine. In Wisconsin, two weeks ago, it was the side that my son’s mother-in-law prepared to join a grilled tenderloin and corn on the cob.


Wow!


This is all you need:

Tomato, sliced or cubed

A few slices of soft Mozzarella

Freshly harvested sprigs of basil and mint

A drizzle of extra virgin olive oil

A few drops of balsamic vinegar or glaze.

Sea salt and ground pepper.


Voila!
